For
the past 10 years I have been working on developing soy meat
alternatives, primarily because of my family’s poor health
history with
serious illness. My mother suffered from cancer and to watch
her die a
slow painful death almost killed me. The pain she went through,
especially
after meals, was unbearable. I would not like to wish it on
anybody. I
observed her symptoms and now feel soy would have brought
some relief from
her suffering.
It was not until I read a book on Lecithin and found out the
potential
benefits of diet containing soy, that I started to experiment
with soy as
a meat alternative. I now believe that soy as an alternative
to meat in
ones diet promotes the prevention of cardiovascular disease
and various
cancers. I am not an academic and have no qualifications in
the medical
field. However, I regularly research and keep up to date with
new
developments on such topics as nutrition and human health,
from which I
draw my own conclusions.
There are many academics, professors and friends that I am
indebted to for
their assistance in my work through the years, notably: Adjunct
Professor
Dr Mark Messina for his vast knowledge on the clinical properties
of soy
and for his continued encouragement. Dr Aaron Tabor of Revival
Soy for his
excellent document “12 Parts of Soy”, from which I learned
so much. Dr.
Adamasco Cupisti for his works on the beneficial effects of
soy on kidney
function. My husband and family for their encouragement and
support and to
the management of Pan Group who sponsored lunch for their
thousands of
employees. My colleagues for being so kind to volunteer to
be my guinea
pigs in testing new products! Most of all to my dearest mother,
for not
only giving me life and showing me the value of life to us
all, but also
to all living creatures.
I am dedicated to this cause for the sake of my mother’s memory,
to saving
the life of animals and for present and future sufferers of
cancer. and
some other chronic diseases, I am convinced that a daily intake
of soy in
ones diet will make a positive difference to health and well
being.
